The scent of pasta with sun-dried tomatoes reminds me of summer and tasty food eaten on the patio.
Here is my fresh, simple and satisfying recipe for sun-dried tomato pesto…
Ingredients
100g sun-dried tomatoes, in oil – drained (retain the oil)
A handful chopped fresh basil (plus extra for garnish)
2 cloves garlic, chopped
25g pine nuts
1/2 small red onion, chopped
Chilli flakes (optional)
Olive oil
50g grated Parmesan cheese
Salt and pepper to taste
Your favourite pasta – I love this with linguine!
Method
Cook the pasta according to package instructions.
Meanwhile, slowly toast the pine nuts until just changing colour – be careful not to burn them!
In a food processor or blender combine the sun-dried tomatoes, chilli flakes, basil, garlic, pine nuts and onion.
Process until well blended.
Stir in olive oil (combined with the sun-dried tomato oil) and parmesan cheese.
Season with salt and pepper.
Add drained pasta back to the pot you cooked it in and add sun-dried tomato pesto. Toss to coat and season with a bit more olive oil and parmesan.
Garnish with basil leaves.
So simple and quick – perfect for summer! It packs quite the flavour punch! Not only is it great with pasta but it’s also fantastic on pizza and in sandwiches.
You should transfer the sun-dried tomato pesto to a large jar, cover with a thin layer of olive oil and store in the fridge for up to 5 days. Pesto can also be frozen, just transfer to a suitable container or an ice cube tray (cover with a layer of olive oil).

I would never dream about making pesto, it is not something we tend to eat much of, but it does look and sound tasty and I think I might try it x

Another fabulous recipe :D we’re going to be making the smoked salmon pate tomorrow! Anyway, I love sundried tomatoes and pesto, together it’s a perfect combination. I’ve always bought it though and never made it from scratch, I think you’ve convinced me again as this looks delicious :D

I can’t have too much tomato because of my acid reflux and hernia but I do love it all the same. This pesto looks delicious!
