These soft and chewy banana oatmeal bites are simple to make and they taste yummy. They are a perfect go-to healthy snack, totally guilt free and satisfying.
I was inspired by this simple recipe for two ingredient cookies from The Burlap Bag http://www.theburlapbag.com/2012/07/2-ingredient-cookies-plus-the-mix-ins-of-your-choice/
Soft banana and chocolate chip oatmeal bites
Ingredients
2 VERY ripe bananas
85g oats
Handful chocolate chips
1/2 teaspoon cinnamon
Method
Preheat oven to 180c.
Mash 2 very ripe bananas in a bowl. Add oats, chocolate chips and cinnamon, mix well.
Using a spoon, scoop the banana mixture and drop small spoonfuls onto the lined cookie sheet.
Bake in the oven for 15-20 minutes until golden brown.
Remove from the oven, let cool a few minutes before eating. Store in an airtight container and eat within a day or two.
Soft banana and peanut butter oatmeal bites
Ingredients
2 VERY ripe bananas
85g oats
1 or 2 tablespoons of peanut butter
These soft banana oatmeal bites are so versatile.
Other additions:
- Nutella
- Honey
- Butterscotch
- Dried fruit
- Shredded coconut
- 1/4tsp of vanilla extract
- 1tsp brown sugar
- Almond butter
- Chopped nuts
You could divide up your mixture and make several different combinations in one batch.
They really are delicious, soft and chewy. You will have to resist the urge to polish them all off. They are so quick to make, I find myself making these again and again.

I can’t believe how easy this is! Bananas never get finished at my house, so we always end up with a lot of ripe bananas. My boyfriend is going to love this, be like banana-cinnamon-like things. I will also add a dash on vanilla extract.

Oooo! I’m glad you came before me in the blog hop, I might have missed these otherwise. My youngest has special needs (including special diet) and these (minus chocolate) will make a perfect healthy treat… I’m thinking I can replace chocolate chips with raisons or blueberries.
