How about a crispy thin crust pizza freshly made in your own kitchen?

I love homemade pizza, it is so easy to make and more flavoursome than store bought or takeaway pizza.  It is also cheaper, healthier and has a lovely fresh taste.

Ingredients

For the base

300g strong bread flour

1 tsp salt

1 tsp instant yeast

1 tbsp olive oil, plus extra for drizzling

For the sauce

200ml passata

1 garlic clove (crushed)

Dried oregano

Handful of fresh basil

Chilli flakes if you like some extra heat in your sauce


Method

  • Pre-heat oven to 240C/220C fan.  If you are using a pizza stone (it is really worth investing in one – the pizza crust is lovely and crisp) place it in the oven now so that it is hot enough by the time you are ready to cook your pizza.
  • Put the flour into a large bowl, then stir in the yeast and salt. Make a well, gradually pour in 180ml warm water and the olive oil.  Mix together with a wooden spoon. If the dough is too sticky that’s easily remedied, just add a bit more flour or if it’s too dry add a little water!
  • Turn onto a lightly floured surface and knead for 5 minutes. You can leave the dough to rise if you like, but it’s not essential for a thin crust.
  • On a floured surface, roll out the dough into large rounds, about 25cm across, using a rolling pin. The dough needs to be very thin as it will rise in the oven.
  • To make the tomato sauce mix 200ml passata, a handful of fresh basil, 1 crushed garlic clove, dried oregano and chilli flakes together. Spoon onto your bases and spread with the back of your spoon. (You could make the sauce in advance to allow the flavours to combine.)
  • Dust your pizza peel (This is the long-handled disc used for inserting and removing pizzas from the oven, you can buy it easily online – if you don’t have a pizza peel use the back of a cookie baking sheet but honestly the pizza peel is worth the investment) with a 50-50 mix of semolina and flour. Semolina is gritty, it makes the pizza slide better onto your pizza stone and adds an extra crispness.
  • Top the bases with your chosen ingredients, drizzle with olive oil, and bake until the crust is crisp and the topping is bubbling.

 

Topping suggestions: 

There are so many different choices of topping. Have fun trying different combinations and discover a new favourite: grated cheese, olives, chopped onion, chopped peppers, chopped tomatoes, broccoli florets, sliced courgettes, sliced mushrooms, tinned sweetcorn, roasted vegetables, chopped pineapple, tuna, ham, cooked chicken, chorizo, pepperoni, salami…


You can also use this pizza base recipe to make a garlic pizza bread.

  • Make the bases a little thicker than for the thin base pizza.
  • In a bowl mix together a teaspoon of garlic puree and a heaped tablespoon of butter.
  • Spread it over the base using a knife.
  • Top your base with grated mozzarella and cheddar cheese.
  • Bake for 15 minutes or until risen and golden.

You can freeze the pizza dough too, you can make a batch and divide the dough into individual portions wrapped in cling film or in freezer bags. Defrost thoroughly before use.

  33. All our pizza is homemade. I do not allow any other pizza in the house. Except for one birthday party, when we bought pre-made pizza at Cosco and I still feel bad about it, like I betrayed my principles :-(
