Happy St. Patrick’s Day

irish-845398This month’s Home Bake Box celebrated St. Patrick’s Day with 3 themed bakes.  I’ve lived in the UK for the past 20 years and I still get homesick on St. Patrick’s Day. I remember going to mass followed by watching or taking part (I marched with the St John’s Ambulance first aid group) in the St. Patrick’s Day parade – I’ve lots of good memories of my childhood in Ireland.

My favourite recipe in the Home Bake Box was the Pot of Gold Cupcakes. These cupcakes were easy to bake and I had so much fun decorating them with marshmallow clouds, sour rainbow sweets and a chocolate caramel mini pot of gold.  They are so cute and taste yummy too.

The Fudgy Green Peppermint Brownies had a little too much peppermint in the frosting but the brownies tasted delicious, especially straight from the fridge.

I’m not a lover of Soda Bread but my friends enjoyed my baking and told me that it tasted ‘seriously good’.
