My delicious seafood linguine recipe:
Extra virgin olive oil
1 clove garlic
Seafood mix (fresh or frozen – king prawns, scallops, mussels and squid rings)
Juice of one lemon
2 tbsp half fat creme fraiche
Cook the linguine in salted boiling water for 9 minutes.
Heat 1 tbsp of olive oil in a frying pan, add the finely chopped garlic clove and seafood mix, cook over a medium to high heat, turning occasionally. Remove from the heat.
Add the drained pasta to the seafood mix, then add the lemon juice, creme fraiche and the parsley. Mix together until well combined.
This simple seafood linguine is yummy served with salad. Enjoy!
