Today is a ‘bad pain day’, I’ve overdone it and EVERYTHING hurts! But that doesn’t mean I can’t be productive. I’m spending the day with my recipe books, Pinterest and my laptop – inspiration to find, planning to be done and lists to be filled!
In the past week I’ve mastered the ugly banana and walnut cake – I can’t deny its unattractiveness, after all you’ve seen the picture! I’ve prepared the garden for summer planting and sun (come out, come out wherever you are!)
and yesterday I allowed Mary Berry to hold my hand and guide me through the art of baking the Victoria Sandwich :)
I was going to use the all-in-one method (do I sound convincing? #expertbaker)
All the ingredients were then weighed and put in the mixing bowl – a little messy but not difficult!
I’m still at the stage where turning the mixer on and watching it do its magic is exciting…
‘Divide the mixture evenly between the tins and level out’ – this was the hard bit, I really tried to evenly divide it, I bent down to eye level, I moved some of the mixture from one tin to the other and then back again. I must admit that I was a little messy here – especially when trying to level it. Well, I did my best.
Baked in the oven for 25 long minutes (firemen on standby!):
Cake stuck together with jam :) Now for a sprinkle of sugar? No problem……….ahem! It was an avalanche:
But so tasty :) And filling!
The sun has finally made an appearance so it’s time to sit in the garden and ponder the merits of growing my own strawberries and tomatoes….
