I’m enjoying my little challenges every week. Just because I’m in constant pain doesn’t mean I have to give up on life and not try new things. A year ago I would have laughed at anyone’s suggestion that I would be writing a blog about fibromyalgia, cooking, baking and making homemade laundry powder and soap. I may have fibromyalgia but it doesn’t have me!
This weekend I set myself a little challenge – I was going to make lamb shish kebabs, yoghurt sauce and homemade flatbread. Mmmm delicious!
Ingredients:
marinade
- 1 garlic, finely chopped
- 1 tsp fresh ginger, finely chopped
- 1 tbsp lemon juice
- 50ml olive oil
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp ground oregano
- 1 tsp ground cumin
- pinch of cayenne pepper
- 1 tbsp grated onion
kebabs
- 450g lean diced lamb
- 2 medium red onions, cut into chunks
- 3 tomatoes, cut into chunks
(You could also add green peppers)
Method:
Combine all the marinade ingredients in a large bowl. Add lamb cubes and toss until completely coated.
Marinate for a few hours or overnight.
Pre-heat a griddle pan (or light your BBQ).
Divide the lamb, tomatoes and red onion evenly and thread the pieces on skewers (you need to soak wooden skewers in warm water for at least 20 minutes to keep them from igniting on the grill), alternating lamb, tomatoes and red onion.
Grill, turning to cook evenly, for approximately 10 minutes – until the lamb is cooked.
Meanwhile mix together all of the yoghurt sauce ingredients (recipe below) in a bowl until well combined.
Serve the cooked kebabs with the yoghurt sauce and homemade flat bread (recipe below). A great meal that will definitely be made again!!
(If you don’t have skewers you can cook the lamb, red onion and tomatoes on a griddle and serve on flat bread with a dollop of the yummy yoghurt sauce.)
The best yoghurt sauce ever!
- 150g Greek-style yoghurt
- 1 tbsp tahini (sesame paste – you can easily make your own with sesame seeds and olive oil)
- 2 tbsp extra virgin olive oil
- 1 garlic clove, peeled, finely chopped
- pinch of salt
Homemade flatbread
Ingredients
- 125g Greek style natural yoghurt
- 125g plain flour, plus extra for dusting
- ½ tsp baking powder
- Pinch of salt
- 1 tbsp vegetable oil
Method
To make the flatbread, place the Greek style natural yoghurt, flour, baking powder and salt in a bowl. Mix together using your hands until all of the ingredients are combined.
Dust a clean work surface with flour, then tip out the dough. Knead the dough for a few minutes. Divide into four equal-sized pieces. Roll each piece into a ball (make sure the rolling pin is floured too), then roll flat into an oval shape roughly 2mm thick and brush with olive oil. (Make sure that they aren’t too thick as one of my flatbreads was thicker at one end and tasted doughy!)
Heat a griddle pan until very hot. Place the flatbreads on the griddle and cook for approximately 1 to 2 minutes on each side, until they have griddle lines and have puffed up slightly.
Small accomplishments should be celebrated :) I’m looking forward to my next little challenge.

Omg these sound so yummy!!! Hubby and I are lamb obsessed. Lamb was even a option on our wedding menu… So need to give these a try :)

i loved eating these in Germany. the Turks used to make them at their small vending shacks.
