Traditional apple crumble

Apple crumble triggers happy memories of my childhood; it is the perfect combination of a golden and crunchy top with delicious baked apples. I love celebrity chef Phil Vickery’s traditional apple crumble recipe – it is quick and easy to make, a yummy treat to warm you up on a cold day.

Ingredients

4 large Bramley cooking apples

4 tbsp olive oil

1 large lemon, the zest and juice of

400g unrefined caster sugar

2 pinches cinnamon powder

115g cold unsalted butter

225g plain flour

25g porridge oats

Method

  • Pre-heat the oven to 200 C.
  • Cut the peeled and cored apples into large chunks.
  • Heat the oil in a saucepan, add 175g sugar, cinnamon, lemon zest and juice and then add the apples. Cook the combined ingredients for 5 minutes so that the apples have softened.
  • You should then tip the stewed apples into a large baking dish.
  • Put the flour and butter into a food processor and whizz until it resembles fine breadcrumbs.
  • Tip into a bowl and gently stir through the sugar and then spoon over the top of the stewed apples. Sprinkle the oats on top.
  • Bake in the pre-heated oven for 30 – 40 minutes or until the top is browned.

You can’t beat this classic apple crumble recipe; I love how the hot, crispy crumble hides the rich fruit below. It is a delicious dessert, perfect served with madagascar vanilla custard or ice cream. Comfort food at its best!

    I saw Phil Vickery on This Morning yesterday making a pear version which looked equally delish. He says that you are supposed to have 3 times the crumble to 1 times the sauce and we all make the mistake of packing the crumble mix down so it becomes a lump.
